  • 3 cups cooked chicken, shredded or chopped (about 450g / 1 lb)
  • 4 cups green cabbage, thinly sliced (about 250g / 9 oz)
  • 1 cup carrots, shredded (about 120g / 4 oz)
  • 4 green onions, sliced (about 40g / 1.4 oz)
  • ½ cup fresh cilantro, chopped (about 10g / 0.35 oz) – optional
  • 1 cup crunchy chow mein noodles (about 30g / 1 oz)
  • 2 tablespoons toasted sesame seeds (about 18g / 0.6 oz)
  • ¼ cup soy sauce (60ml)
  • 2 tablespoons rice vinegar (30ml)
  • 1 tablespoon toasted sesame oil (15ml)
  • 1 tablespoon honey (20g)
  • 1 teaspoon fresh ginger, grated (about 2g)
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Thinly slice the cabbage. Shred or chop the cooked chicken into bite-sized pieces. Shred the carrots, slice green onions, and chop cilantro. Prepare minced garlic and grated ginger for the dressing.
  2. In a small bowl, whisk together soy sauce, rice vinegar, toasted sesame oil, honey, grated ginger, minced garlic, and red pepper flakes if using. Adjust sweetness or acidity to taste.
  3. In a large mixing bowl, combine cabbage, carrots, green onions, cilantro, and chicken. Pour the dressing over and toss well to coat evenly.
  4. Just before serving, sprinkle in the crunchy chow mein noodles and toasted sesame seeds. Toss gently to keep noodles crisp.
  5. Serve immediately, optionally with a wedge of lime or extra sesame seeds on top.

Notes

Add crunchy noodles just before serving to keep them crisp. Dressing can be made ahead and flavors deepen overnight. Use fresh ginger and garlic for best flavor. Swap chicken for tofu or tempeh for vegetarian/vegan version. Adjust honey and vinegar to balance sweetness and acidity.
