Description
An incredibly tender and flavorful slow cooker pot roast made with just five ingredients: chuck roast, ranch dressing mix, au jus gravy mix, butter, and pepperoncini peppers. This easy, set-it-and-forget-it meal is perfect for busy weeknights.
Ingredients
- 3–4 pounds chuck roast
- 1 packet (1 ounce) dry ranch dressing mix
- 1 packet (1 ounce) dry au jus gravy mix
- 1/2 cup (113g) unsalted butter
- 1 jar (7-8 ounces) pepperoncini peppers, drained with 1/4 cup juice reserved
- 1 pound small red or Yukon Gold potatoes, halved (optional)
- 2 large carrots, chopped (optional)
- 1 large yellow onion, sliced (optional)
Instructions
- Trim any large pieces of hard fat from the chuck roast and pat dry.
- Place the roast in the bottom of a 6-quart slow cooker. If using onions, place sliced onions on the bottom first.
- Sprinkle the ranch dressing mix and au jus gravy mix evenly over the top of the roast.
- Place the butter on top of the roast. Pour the reserved pepperoncini juice over the roast, then add the peppers. Add optional vegetables now if desired.
- Cover and cook on LOW for 8 hours or HIGH for 4-5 hours. If adding potatoes, add them in the last 2 hours of cooking on LOW, or at the beginning if cooking on HIGH.
- Remove the roast from the slow cooker and let it rest for 5 minutes.
- Shred the meat using two forks.
- Serve with the juices from the slow cooker on the side.
Notes
Do not use lean cuts like eye of round; chuck roast is essential for moisture. The butter creates a rich sauce, so do not skip it. If watching sodium, use low-sodium seasoning packets. Potatoes should be added in the last 2 hours of cooking on LOW to prevent them from turning to mush. Leftovers taste even better the next day.
