  • 1/4 cup (57g) unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1/4 cup (60ml) milk
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon
  • 2 tablespoons unsalted butter, melted (for brushing)
  • Powdered sugar (optional, for dusting)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, salt, and 1/4 cup granulated sugar. Ensure there are no lumps.
  2. In a separate bowl, whisk the melted butter, egg, milk, and vanilla extract until fully combined and smooth.
  3. Pour the wet ingredients into the dry ingredients. Gently stir with a spatula until just combined. Do not overmix.
  4. Let the dough rest for 5 minutes to allow the flour to hydrate.
  5. Preheat your air fryer to 350°F (175°C). Lightly spray the basket with non-stick cooking spray.
  6. Use a small cookie scoop or two teaspoons to drop balls of dough onto a parchment-lined plate. You should get about 20-24 bites.
  7. Place the dough bites in the air fryer basket, leaving space between them. Cook for 6-8 minutes, flipping halfway through, until golden brown.
  8. While the bites are cooking, melt the 2 tablespoons of butter and mix the 1/2 cup sugar with the cinnamon in a shallow dish.
  9. As soon as the bites are done, brush them lightly with the melted butter and roll them in the cinnamon-sugar mixture while still warm.
  10. Let cool completely before storing.

Notes

Do not overcrowd the air fryer basket; cook in batches if necessary. Coat the bites immediately while warm to ensure the sugar sticks. For best storage, freeze in a single layer before bagging. They reheat well in the microwave or air fryer.
