  • 68 ounces pancetta, cut into small cubes or strips

  • 46 cloves garlic, minced
  • 1.5 cups heavy cream (full-fat)
  • 1.5 cups freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or dried basil and oregano)
  • Freshly cracked black pepper, to taste
  • 1 cup reserved pasta water
  • Salt, for pasta water
  • Optional: ½ teaspoon red pepper flakes
  • Optional: 2 cups fresh spinach
  • Optional: Zest of 1 lemon

Instructions

  1. Prep ingredients: Cut pancetta into cubes, mince garlic, grate Parmesan, and measure cream and seasonings.
  2. Boil pasta: Bring a large pot of heavily salted water to a boil. Cook pasta until al dente (8-10 minutes). Before draining, reserve 1 cup of pasta water. Drain pasta and set aside (do not rinse).
  3. Crisp pancetta: While pasta cooks, heat a large skillet over medium heat. Add pancetta (no oil needed) and cook for 5-7 minutes until golden and crispy. Remove pancetta with a slotted spoon to a paper towel-lined plate, leaving the rendered fat in the pan.
  4. Build sauce: Reduce heat to medium-low. Add butter to the pan with pancetta fat. Once melted, add garlic (and red pepper flakes if using). Cook for 1 minute until fragrant but not browned.
  5. Simmer cream: Pour in heavy cream and Italian seasoning. Stir and simmer for 3-4 minutes until the sauce thickens slightly and coats the back of a spoon.
  6. Add cheese: Remove skillet from heat. Gradually add grated Parmesan, stirring constantly until melted and smooth. If too thick, add pasta water a tablespoon at a time.
  7. Combine: Add drained pasta to the sauce. Toss to coat evenly. Stir in half of the crispy pancetta. Adjust salt if needed.
  8. Serve: Serve immediately topped with remaining crispy pancetta, extra Parmesan, black pepper, and optional lemon zest or fresh basil.

Notes

Save the starchy pasta water; it is crucial for emulsifying the sauce. Always remove the pan from heat before adding cheese to prevent it from becoming grainy. Use freshly grated Parmesan, as pre-grated cheese contains anti-caking agents that can ruin the texture. If using half-and-half instead of heavy cream, the sauce will be thinner. This recipe does not freeze well due to the dairy content.
