Cozy Fall Turkey Chili: 5-Ingredient White Bean Recipe

  • Author: Saly
  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Description

A simple, hearty, and creamy turkey chili made with white beans, perfect for chilly evenings. This pantry-friendly meal is ready in under 30 minutes of active time and offers a comforting, lighter alternative to traditional beef chili.

Ingredients

Scale
  • 1 pound ground turkey (93% lean)
  • 1 medium yellow onion, diced
  • 2 cans (15oz each) cannellini beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 3 cloves garlic, minced
  • 1 can (14.5oz) diced tomatoes (optional)
  • 1 teaspoon smoked paprika (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. Prep ingredients by dicing the onion, mincing the garlic, and draining/rinsing the cannellini beans.
  2. Heat a large skillet or Dutch oven over medium-high heat with a splash of olive oil. Add the ground turkey and cook for 8-10 minutes, breaking it up with a spoon, until browned. Drain excess fat if necessary.
  3. Add the diced onion to the turkey and cook for 3-4 minutes until translucent. Add the minced garlic and cook for 1 more minute until fragrant.
  4. Stir in the chili powder and cumin, toasting the spices for 1 minute to release their oils.
  5. Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Add the cannellini beans and diced tomatoes (if using).
  6. Bring the mixture to a boil, then reduce heat to low. Simmer uncovered for 15-20 minutes, stirring occasionally, until the chili thickens and flavors meld.
  7. Taste and adjust seasoning with salt, pepper, or a pinch of sugar if needed. If too thick, add a splash of water or broth.
  8. Serve hot, topped with green onions, sour cream, or cheese.

Notes

For a creamier texture, mash a few beans against the side of the pot during simmering. If using canned tomatoes, balance acidity with a pinch of sugar. This recipe freezes well for up to 3 months.
