  • ½ cup unsalted butter (melted)
  • 4 large eggs
  • ½ cup raw honey
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • ½ cup raisins
  • Optional Streusel Topping: ¼ cup flour, ¼ cup brown sugar, 2 tablespoons cold cubed butter, pinch of cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Bring a large pot of salted water to a boil. Cook egg noodles until al dente (6-8 minutes).
  3. Drain noodles and rinse immediately under cold water to stop cooking. Shake off excess water and set aside.
  4. In a large bowl, whisk together melted butter, eggs, honey, sugar, vanilla, cinnamon, and nutmeg until smooth and frothy.
  5. Add the drained noodles to the custard mixture and toss gently to coat. Let sit for 5 minutes, then stir again.
  6. Stir in raisins.
  7. Pour the mixture into the prepared baking dish and spread evenly.
  8. If using streusel topping, sprinkle it over the top. Otherwise, drizzle with a little extra melted butter.
  9. Bake for 45-50 minutes until the top is golden brown and the center is set. Cover loosely with foil if browning too quickly after 30 minutes.
  10. Remove from oven and let cool for at least 15 minutes before slicing to allow the custard to set.

Notes

Do not overcook the noodles; they must be al dente to prevent mushiness. Let the kugel rest for 15-30 minutes before cutting to ensure it sets properly. Can be assembled the night before and refrigerated; add 5-10 minutes to baking time if baking from cold. Tastes better on day 2.
