- 4 cups frozen shredded hash browns (about 450g)
- 1 pound breakfast sausage (mild pork, spicy, or turkey sausage works)
- 2 cups shredded sharp cheddar cheese (about 200g)
- 6 large eggs (room temperature)
- 1 cup milk (whole or 2%, 240ml)
- 1 small onion, diced (about 70g)
- 2 cloves garlic, minced
- Salt and black pepper to taste
- 2 tablespoons butter (30g)
- Optional add-ins: 1 cup chopped bell peppers or mushrooms
- Optional garnish: fresh parsley or chives
Instructions
- Preheat oven to 350°F (175°C). Dice onion and mince garlic. Shred cheese if not pre-shredded.
- Heat a large skillet over medium heat and melt butter. Sauté diced onion for 2-3 minutes until softened. Add garlic and cook for 1 minute, stirring constantly.
- Add sausage to skillet, breaking it up with a spoon. Cook until browned and cooked through, about 4-5 minutes. If using bell peppers or mushrooms, add now and cook until tender.
- In a large mixing bowl, whisk together eggs, milk, salt, and pepper until combined and slightly frothy.
- Spread frozen hash browns evenly in a 9×13-inch baking dish. Scatter cooked sausage and veggie mixture over hash browns.
- Pour egg mixture evenly over the top. Sprinkle shredded cheddar cheese generously over everything.
- Bake uncovered for 45-50 minutes, or until eggs are set and cheese is bubbly and golden brown. A knife inserted near the center should come out clean.
- Let the bake rest for 5 minutes before slicing. Garnish with fresh parsley or chives if desired and serve warm.
Notes
Do not thaw hash browns before assembling to keep the bake crispy. Use room temperature eggs and milk for even baking. Keep bake uncovered to avoid sogginess. Leftovers reheat well in oven or microwave with a splash of milk. Can be made ahead and refrigerated overnight, adding 10 extra minutes to bake time.
