Ingredients
- 2 medium sweet potatoes (6–8 oz each)
- 1 tablespoon olive oil
- 1.5 cups shredded chicken (rotisserie or canned)
- ½ cup buffalo sauce (vinegar-based)
- 2 tablespoons unsalted butter
- ½ teaspoon garlic powder
- 2 stalks green onions, sliced
- ¼ cup plain Greek yogurt
- 1 packet ranch seasoning mix (approx. 0.7 oz)
- 1–2 tablespoons milk
- Optional: ¼ cup shredded cheddar cheese
- Optional: ½ avocado, sliced
Instructions
- Prep the sweet potatoes by washing them thoroughly and poking 10-12 holes deep into them with a fork to allow steam to escape.
- Cook the potatoes: Microwave on high for 5 minutes, flip, then microwave for another 3-5 minutes until soft. Alternatively, bake at 400°F (200°C) for 45-60 minutes until a knife slides in with zero resistance.
- While potatoes cook, melt butter and buffalo sauce in a small skillet over medium heat. Add shredded chicken and garlic powder, stirring until the chicken is fully coated and glossy.
- In a small bowl, whisk together Greek yogurt, ranch seasoning, and 1 tablespoon of milk until smooth. Add more milk if needed to reach a drizzle-able consistency.
- Slice the cooked sweet potatoes open lengthwise and fluff the inside with a fork.
- Spoon the buffalo chicken mixture generously into the potatoes.
- If using cheese, sprinkle it on top and microwave for 30 seconds or bake for 5 minutes to melt.
- Drizzle with the ranch sauce and top with sliced green onions. Serve immediately.

Ensure you poke enough holes in the sweet potatoes to prevent them from exploding in the microwave. For best texture, use medium-sized potatoes to avoid waste.
