  • 4 tablespoons unsalted butter (60 g)
  • 68 fresh sage leaves
  • 2 medium apples (preferably Gala or Honeycrisp), sliced (about 10.5 oz / 300 g)
  • 1 tablespoon olive oil (15 ml)
  • Salt, to taste
  • Black pepper, freshly cracked, to taste
  • 2 cloves garlic, minced (about 1 teaspoon)
  • 1 tablespoon apple cider vinegar (15 ml)
  • 1/4 cup chicken broth (60 ml), optional

Instructions

  1. Pat pork chops dry with paper towels and season both sides generously with salt and pepper. Slice apples into thin wedges about 1/4 inch thick. Toss apple slices with minced garlic and apple cider vinegar in a small bowl. Set aside.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add pork chops and sear without moving for 3-4 minutes until golden crust forms. Flip and sear the other side for 3 minutes. Remove chops from pan and set aside.
  3. Reduce heat to medium. Add butter to the skillet and swirl as it melts and foams. Watch closely until it turns golden brown and smells nutty. Add sage leaves and crisp them in the butter for about 1 minute.
  4. Add apple and garlic mixture to the skillet with brown butter and sage. Stir gently to coat apples. Cook for 3-4 minutes, stirring occasionally, until apples soften and caramelize but hold shape. Pour in chicken broth to deglaze pan, scraping browned bits. Let liquid reduce slightly for about 1 minute.
  5. Nestle pork chops back into the pan on top of apples. Spoon brown butter and sage over chops. Cover skillet with lid or foil, reduce heat to low, and cook for 5-7 minutes until pork is cooked through.
  6. Remove chops and apples from pan. Spoon extra brown butter and crispy sage over the top. Serve immediately with your favorite sides.

Notes

Watch the brown butter carefully to avoid burning; remove from heat as soon as it smells nutty. Pat pork chops dry before searing to get a good crust. Use bone-in pork chops for juicier meat. Fresh sage crisps up better than dried. Choose apples that hold shape when cooked, like Gala or Honeycrisp.
