Description
A simple and comforting mashed potatoes recipe featuring nutty brown butter and sweet roasted garlic, made with just five ingredients. Perfectly creamy and fluffy, this family favorite is quick to prepare and packed with rich flavor.
Ingredients
- 3 pounds Russet potatoes
- 6 tablespoons unsalted butter
- 6 large garlic cloves
- 1 cup whole milk
- Salt to taste
Instructions
- Preheat oven to 400°F (200°C). Peel the garlic cloves but keep them whole. Place on a small baking sheet or wrap in foil and roast for 20-25 minutes until soft and golden.
- Peel or scrub and cut potatoes into roughly 2-inch chunks. Place in a large pot, cover with cold water by an inch, add 1 teaspoon salt, bring to a boil and cook until fork-tender, about 15-20 minutes.
- While potatoes cook, melt butter in a medium skillet over medium heat. Stir frequently until butter foams and turns golden brown with nutty aroma, about 5 minutes. Remove from heat.
- Drain potatoes thoroughly and return to pot or warm mixing bowl. Squeeze roasted garlic out of skins and mash into potatoes. Pour in browned butter and warm milk, then mash and stir until smooth and creamy. Season with salt to taste.
- Serve immediately, optionally drizzling extra browned butter on top and garnishing with freshly cracked black pepper or chopped chives.
Notes
Do not skip browning the butter to develop rich flavor. Roast garlic whole to mellow sharpness. Warm milk before adding to avoid cooling potatoes and lumpy texture. Use a masher instead of a food processor to keep potatoes fluffy. Leftovers can be refrigerated for up to 3 days and reheated gently with milk and butter. Freezing is not recommended.
