  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons blackened seasoning
  • 2 large ripe avocados
  • 2 limes (juice and zest)
  • 1/2 cup full-fat plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1/2 cup packed fresh cilantro leaves and stems
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1216 small corn tortillas
  • 1 cup shredded cabbage
  • 1/4 cup finely diced red onion
  • Hot sauce (optional)

Instructions

  1. Thaw frozen shrimp if using, then pat them very dry with paper towels.
  2. In a bowl, toss the dry shrimp with melted butter and blackened seasoning until evenly coated.
  3. In a blender or food processor, combine avocados, Greek yogurt, mayonnaise, lime juice, lime zest, garlic, cilantro, and a pinch of salt and pepper. Blend until smooth. Adjust consistency with water or lime juice if needed.
  4. Heat a large skillet over medium-high heat. Add a little oil if necessary.
  5. Add seasoned shrimp in a single layer (cook in batches if needed to avoid crowding).
  6. Cook shrimp for 2-3 minutes on the first side until blackened and pink, then flip and cook for 1-2 minutes more until opaque. Remove from heat immediately.
  7. Warm tortillas in a dry skillet or directly over a gas flame for 10 seconds per side.
  8. Assemble tacos by placing shrimp on warm tortillas, drizzling with avocado lime sauce, and topping with shredded cabbage, red onion, and lime wedges.

Notes

Pat shrimp dry thoroughly to ensure a blackened crust rather than steaming. Do not overcook shrimp as they become rubbery quickly. The avocado sauce can turn brown if exposed to air; press plastic wrap directly onto the surface when storing. Corn tortillas are recommended for authenticity, but flour tortillas work as well.
