  • 3/4 cup heavy cream, cold
  • 1 teaspoon vanilla extract
  • Coarse sugar (optional, for sprinkling)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 inch baking dish with butter or non-stick spray.
  2. In a large bowl, gently toss blackberries with sugar, cornstarch, lemon juice, and lemon zest until evenly coated. Pour into the prepared baking dish.
  3. In a medium bowl, whisk together flour, cornmeal, baking powder, and salt.
  4. Cut the cold, cubed butter into the dry ingredients using a pastry blender or fork until the mixture resembles coarse crumbs with pea-sized butter pieces.
  5. Make a well in the center and pour in heavy cream and vanilla. Stir gently until the dough just comes together; do not knead.
  6. Drop mounds of biscuit dough over the blackberry filling, aiming for 8-10 mounds. Sprinkle with coarse sugar if desired.
  7. Bake for 40-45 minutes until the topping is deep golden brown and the filling is bubbling vigorously.
  8. Let cool for at least 15 minutes before serving to allow the filling to thicken.

Notes

Keep all ingredients cold for flaky biscuits. If using frozen berries, do not thaw them and add 5 minutes to baking time. Let the cobbler cool for 15 minutes to allow the cornstarch to set and prevent a soupy filling.
