  • 12 oz (340g) Dried Mission Figs
  • 2 tablespoons Apple Cider Vinegar
  • 1 cup (240ml) Water
  • 1 cup (200g) Granulated Sugar (or half white, half brown)
  • 2 tablespoons (30ml) Aged Balsamic Vinegar
  • 1 tablespoon (6g) Fresh Thyme Leaves
  • 1 teaspoon (5ml) Lemon Juice
  • 1 teaspoon Powdered Pectin (Optional, for firmer set)

Instructions

  1. Rinse dried figs under cool water. If large, chop them in half. Set aside.
  2. In a large heavy-bottomed pot, combine figs, water, and apple cider vinegar. Bring to a boil over medium-high heat.
  3. Reduce heat to medium-low and simmer for 10 minutes until figs soften and start to break down. Stir occasionally.
  4. Add sugar and fresh thyme leaves. Stir to dissolve sugar and simmer for another 15-20 minutes until the mixture thickens and becomes fragrant.
  5. Pour in aged balsamic vinegar. Stir and simmer gently for 15-20 minutes, stirring frequently, until the jam coats the back of a spoon and holds a line when a finger is dragged through it.
  6. Remove pot from heat. Stir in lemon juice. Taste and adjust sweetness or tang if desired. Remove thyme stems if used.
  7. Let jam cool for 10 minutes.
  8. Ladle hot jam into clean jars, leaving ¼ inch of headspace. Wipe rims clean and seal with lids.
  9. Let cool completely at room temperature before storing in the fridge or freezer.

Notes

This jam freezes exceptionally well for up to 6 months. It keeps in the fridge for up to 3 weeks. The jam will thicken further in the fridge; let it sit at room temperature for 10 minutes before using. For a smoother texture, use an immersion blender; for chunkier, use a potato masher. Ensure you use a heavy-bottomed pot to prevent scorching.
