Description
This easy, no-bake seven-layer taco dip is the perfect game day snack. Featuring layers of refried beans, seasoned ground beef, sour cream, fresh guacamole, cheese, and veggies, it’s a crowd-pleaser that looks fancy but is incredibly simple to make.
Ingredients
- 16 oz (450g) refried beans
- 1 packet (or 2 tbsp) taco seasoning mixed with 2-3 tbsp water to form a paste
- 1 lb (450g) ground beef (85/15), browned and drained
- 1 cup (240g) full-fat sour cream
- 1.5 cups (~350g) fresh guacamole (made from 2 ripe avocados, lime juice, salt, and optional diced onion)
- 2 cups (200g) shredded sharp cheddar cheese
- 6 oz (1 can) sliced black olives
- 2 medium Roma tomatoes, diced and patted dry
- ½ cup fresh cilantro, chopped
- 1 bag sturdy tortilla chips, for serving
Instructions
- Prep ingredients: Dice tomatoes, chop cilantro, slice olives, and make fresh guacamole.
- Spread the refried beans evenly over the bottom of a 9×13 inch baking dish to create a solid base.
- Spread the taco seasoning paste evenly over the bean layer.
- Spread the browned, drained ground beef over the seasoned beans.
- Spread the sour cream over the beef layer, pushing it into the corners.
- Spread the fresh guacamole over the sour cream layer.
- Sprinkle the shredded cheddar cheese evenly over the guacamole.
- Scatter the sliced black olives and diced tomatoes over the cheese.
- Garnish with fresh chopped cilantro.
- Chill in the refrigerator for at least 30 minutes before serving to help layers set (optional but recommended).
Notes
For best results, use fresh guacamole and press plastic wrap directly onto the surface to prevent browning. Do not freeze this dip as dairy and avocado do not freeze well. For a vegetarian version, substitute the ground beef with black beans or pinto beans. Serve with sturdy tortilla chips to prevent breaking.
