Bakery-Style Chocolate Chunk Tahini Cookies

  • Author: Saly
  • Total Time: 30 minutes
  • Yield: 24 cookies 1x

Description

Rich, chewy, and bakery-quality cookies featuring the nutty depth of tahini and dark chocolate chunks. These cookies are easy to make with pantry staples and deliver a sophisticated salty-sweet flavor profile.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) packed dark brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup (120g) tahini, well-stirred
  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 1 1/2 cups (250g) dark chocolate chunks
  • Flaky sea salt (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, and salt in a small bowl and set aside.
  3. In a large bowl, beat the softened butter, brown sugar, and granulated sugar on medium-high speed for 3 minutes until pale and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and tahini until smooth and glossy.
  5. Turn mixer to low speed and gradually add the dry ingredients. Mix just until flour disappears; do not overmix.
  6. Fold in chocolate chunks using a spatula, reserving a handful for topping.
  7. Scoop dough balls (2-3 tablespoons each) onto prepared sheets, spacing 2 inches apart.
  8. Bake for 12-14 minutes until edges are golden but centers look slightly soft.
  9. Immediately sprinkle with flaky sea salt while hot.
  10. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened but not melted to maintain thickness. Stir tahini thoroughly before measuring as it separates. Do not overbake; cookies will firm up as they cool. For best texture, use dark chocolate chunks instead of chips. Chilling dough for 30 minutes is optional but helps prevent spreading.
