Description

  • 1 pound mini smokies or cocktail sausages
  • 1216 slices regular cut bacon
  • 1/2 cup dark brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 23 tablespoons water
  • Optional: 1/4 teaspoon cayenne pepper
  • Optional: 1 tablespoon maple syrup
  • Toothpicks (optional, for securing bacon)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.
  2. Cut bacon slices in half crosswise. Wrap one half-slice around each smokie, overlapping ends slightly. Secure with a toothpick if needed.
  3. In a small saucepan, combine brown sugar, mustard, Worcestershire sauce, garlic powder, black pepper, cayenne (if using), and water. Heat over medium heat, stirring constantly, until sugar dissolves and mixture simmers into a thick syrup. Remove from heat.
  4. Place wrapped smokies on the prepared baking sheet. Brush or drizzle glaze generously over each smokie.
  5. Bake for 10-12 minutes until bacon is crispy and glaze is bubbling.
  6. Remove pan from oven. Flip each smokie using tongs. Brush the other side with more glaze.
  7. Return to oven for 5-7 minutes until bacon is fully cooked and crispy on both sides and glaze is caramelized.
  8. Let cool for 2-3 minutes on the pan before serving warm with toothpicks.

Notes

Use regular cut bacon for best crispiness; thick cut may burn. Glaze twice for maximum flavor. For parties, bake first then transfer to a slow cooker on low to keep warm. Do not freeze baked smokies as texture suffers. Reheat in oven or toaster oven at 375°F for 5-7 minutes to restore crispness.
