- 2 cups (475 ml) plain or vanilla Greek yogurt (full-fat preferred)
- 1 cup (100 g) granola (with nuts and cinnamon recommended)
- 1 cup (about 150 g) fresh strawberries, sliced
- 2 tablespoons (30 ml) honey (or maple syrup for vegan option)
- 1 teaspoon (5 ml) vanilla extract
Instructions
- In a mixing bowl, stir together the Greek yogurt, honey, and vanilla extract until smooth and well combined.
- Wash and slice the strawberries into thin pieces and set aside.
- Line a baking sheet with parchment paper.
- Pour the yogurt mixture onto the baking sheet and spread evenly to about 1/4-inch thickness.
- Sprinkle granola evenly over the yogurt layer, pressing lightly to stick.
- Scatter sliced strawberries on top; optionally add whole berries or chopped nuts.
- Freeze the baking sheet for at least 2 hours or until the bark is completely firm.
- Once frozen, break the bark into irregular pieces.
- Store pieces in an airtight container in the freezer or refrigerator.
Notes
Use full-fat Greek yogurt for creamier texture. Press granola gently to keep it crunchy. Freeze flat for easy breaking. Customize with nuts, seeds, or chocolate chips. To avoid soggy granola, add fruit just before freezing or pat dry if using frozen berries.
