A budget-friendly, single-serving sweet potato casserole that costs under $1.50. It combines creamy mashed sweet potatoes with brown sugar, cinnamon, and toasted marshmallows for a comforting, dessert-like dinner.

- 1 medium sweet potato (about 1 pound / 450g)
- 2 tablespoons unsalted butter
- 2–3 tablespoons milk
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon vanilla extract
- ½ cup mini marshmallows
- 1 tablespoon chopped pecans (optional)
- Pinch of salt
Instructions
- Wash the sweet potato thoroughly. Pierce it all over with a fork.
- Microwave on high for 5-7 minutes, flipping halfway through, until tender. Alternatively, boil in salted water for 15-20 minutes until tender.
- Let the potato cool slightly, then peel and mash it in a bowl until smooth.
- Add butter, brown sugar, cinnamon, vanilla, salt, and milk to the mashed potato. Mix until creamy and uniform.
- Transfer the mixture to a ramekin or small baking dish and spread evenly.
- Sprinkle mini marshmallows (and pecans, if using) on top.
- Bake in a toaster oven or conventional oven at 350°F (175°C) for 5-8 minutes, or until marshmallows are puffed and golden brown.
- Let cool for a minute before serving.
Notes
If boiling the potato, save some potato water to adjust consistency if needed. Ensure the potato is pierced before microwaving to prevent exploding. Watch marshmallows closely as they burn quickly. For a dairy-free version, use coconut oil and coconut milk.
