Instructions
- Pour 1 cup of apple cider into a small saucepan and bring to a simmer over medium heat. Reduce until about ¼ cup remains (syrupy and dark amber), which takes 15-20 minutes.
- Preheat oven to 350°F (175°C) and line a standard 12-cup muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, whisk melted butter, granulated sugar, and brown sugar until combined. Add eggs one at a time, whisking after each. Add vanilla extract and the reduced apple cider, whisking until smooth.
- Pour dry ingredients into wet ingredients and gently fold together with a spatula until just combined. Do not overmix; lumpy batter is desired.
- Divide batter evenly among muffin liners, filling them about ¾ full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Muffins should be golden brown.
- While muffins bake, whisk maple syrup, heavy cream, and ½ teaspoon cinnamon in a small bowl to make the glaze.
- Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
- While muffins are still warm, drizzle with maple glaze and roll in the cinnamon sugar mixture.
- Serve warm or store in an airtight container.
